The higher rate of obesity among low-income women has widely been attributed to environmental barriers; however, many low-income women are still able to maintain a healthy weight despite obesogenic environments. To better understand personal and behavioral attributes related to food choice and weight, overweight/obese women and lean/normal weight women living in similar low-income environments, participated in focus groups, and taste testing sessions to investigate food liking (n=83). During focus groups, lean/normal weight participants reported that health was influential in food choice, while overweight/obese participants expressed cost as being more of a factor. Both BMI (kg/m2) groups reported that taste was of greatest importance. Personal factors, like emotional eating, and overeating were also discussed with differences noted between BMI (kg/m2) groups. Quantitative data also showed cost to be more important for overweight/obese women. Taste testing results revealed that overweight/obese participants had a higher overall liking for both healthy and less healthy foods, as well as other food categories. Additionally, these women had a higher liking of fat in the context of spreadable fats. Our results show that a variety of complex factors interact to influence eating behavior and present weight status of women living in similarly impoverished environments. However, findings from this exploratory study should be confirmed through further research.

After immigrating to the United States (US), obesity and diabetes have increased among the Hmong. Therefore, this study investigated how Hmong children perceive health and diabetes risk so that appropriate interventions may be planned. Hmong children (N = 335), ages 9–18 years participated in this study. A survey used Social Cognitive Theory (SCT) as the theoretical framework and silhouette drawing instrument. Heights and weights were measured and body mass indexes (BMIs) were calculated. About half of the children were either overweight (BMI ≥ 85th < 95th percentile) or obese (BMI ≥ 95th percentile). About 75% chose average sized silhouettes as healthiest and heaviest silhouettes as diabetic shape. Environmental influences including food availability, parents, and media influenced children’s health perceptions. Results suggest a need for culturally appropriate interventions, aiming towards a child’s environment and educating them about risks associated with obesity and diabetes.

Purpose. To explore differences and similarities in environmental, personal, and behavioral factors influencing eating behavior among low-income women of varying weight status. Design. Focus groups (n = 16) were used to collect qualitative data. Quantitative data collected included demographic, lifestyle, and anthropometric (heights and weights). Setting. Community centers, libraries, and homeless shelters in low-income neighborhoods. Participants. Of the 83 participants, 58% were African-American, 28% were white, and the remainder were American Indian, Hispanic, or mixed race. A total of 35% of participants were lean/normal (body mass index <25 kg/m2) and 65% were overweight/obese (body mass index >25 kg/m2). Method. Focus group methodology was used to collect data on 83 participants. Social Cognitive Theory (SCT) provided the theoretical basis. Transcripts were analyzed using the open-coding method and comments between lean/normal and overweight/obese women were systematically compared. Results. Focus group themes were food environment, aberrant eating behavior, health values, and beliefs. Differences in personal and behavioral factors were apparent between overweight/obese and lean/normal women, with the former group frequently discussing emotional eating, overeating, and stashing food, and the latter group communicating greater nutrition knowledge and describing regular physical activity. Both groups similarly expressed experiences with food insecurity and lived in low-income environments. Conclusion. For low-income women, personal and behavioral factors may modify the influence of their obesogenic food environment. Further research within the context of SCT should examine differences between lean/normal and overweight/obese women living in the same environment.

PURPOSE: To investigate influences on shopping and eating behavior of Hmong adults living in St. Paul/Minneapolis, Minnesota. DESIGN AND SETTING: Conducted a mapping project, food surveys, food frequency questionnaire (FFQ), and focus groups (n = 11). SUBJECTS: Subjects were assigned to three groups. The B-TL(1) group was made up of subjects who were born in Thailand/Laos and had lived in the US < or =5 years (n = 19). The B-TL(2) group was made up of subjects who were born in Thailand/Laos, had food memories, and had lived in the US >5 years (n = 20). The B-US group was made up of subjects who were born and/or raised in the US (n = 30). METHODS: Using Geographical Informational Systems software, 15 grocery stores were mapped and surveyed. Food prices were compared with the consumer price index (CPI). The FFQ assessed food consumption patterns. Focus group transcripts were evaluated for themes and coded. Degree of acculturation was assessed by adapting a previously developed instrument. RESULTS: The population is concentrated in St. Paul, coinciding with store density. Limited foods had CPIs and some CPIs were outdated. B-US had significantly higher levels of dietary acculturation than B-TL(2) and B-TL(1), with B-TL(2) also having a higher dietary acculturation level compared with B-TL(1). Acculturation of the Hmong into the American food system, determinants of store type, and Hmong food's having a mainstream factor were identified themes. CONCLUSIONS: B-US and B-TL(2) shopped at American stores more than did B-TL(1) because of convenience, one-stop shopping, and increased English fluency. Hmong foods have entered the American food system and are sold at Asian and American stores.

Bitterness of whey protein hydrolysates (WPH) can negatively affect product quality and limit utilization in food and pharmaceutical applications. Four main bitter peptides were identified in a commercial WPH by means of sensory-guided fractionation techniques that included ultrafiltration and offline two-dimensional reverse phase chromatography. LC-TOF-MS/ MS analysis revealed the amino acid sequences of the bitter peptides were YGLF, IPAVF, LLF, and YPFPGPIPN that originated from α-lactalbumin, β-lactoglobulin, serum albumin, and β-casein, respectively. Quantitative LC-MS/MS analysis reported the concentrations of YGLF, IPAVF, LLF, and YPFPGPIPN to be 0.66, 0.58, 1.33, and 2.64 g/kg powder, respectively. Taste recombination analysis of an aqueous model consisting of all four peptides was reported to explain 88% of the bitterness intensity of the 10% WPH solution.

Bitterness in whole wheat bread can negatively influence product acceptability and consumption. The overall goal of this project was to identify the main bitter compounds in a commercial whole wheat bread product. Sensory-guided fractionation of the crust (most bitter portion of the bread sample) utilising liquid-liquid extraction, solid-phase extraction, ultra-filtration and 2-D offline RPLC revealed multiple bitter compounds existed. The compounds with the highest bitterness intensities were selected and structurally elucidated based on accurate mass-TOF, MS/MS, 1D and 2D NMR spectroscopy. Eight bitter compounds were identified: Acortatarins A, Acortatarins C, 5-(hydroxymethyl)furfural(HMF), 2,3-dihy-dro-3,5-dihydroxy-6-methyl-4(H)-pyran-4-one (DDMP), N-(1-deoxy-D-fructos-1-yl)-L-tryptophan (ARP), Tryptophol (TRO), 2-(2-formyl-5-(hydroxymethyl-1H-pyrrole-1-yl)butanoic acid (PBA) and Tryp-tophan (TRP). Based on the structures of these compounds, two main mechanisms of bitterness generation in wheat bread were supported, fermentation and Maillard pathways.

Objective - To identify a comprehensive set of distinct "need states" based on the eating occasions experienced by midlife women. Design - Series of 7 focus group interviews. Setting - Meeting room on a university campus. Participants - A convenience sample of 34 multi-ethnic women (mean age=46 years). Phenomenon of Interest - Descriptions of eating occasions by "need states," specific patterns of needs for the occasion. Analysis - Interviews were audiotaped, transcribed verbatim, and analyzed for common themes using qualitative data analysis procedures. Findings - Eight need states suggested a hypothetical framework reflecting a wide range in emotional gratification. Need states with a low level of emotional gratification were dominated by sets of functional needs, such as coping with stress, balancing intake across occasions, meeting external demands of time and effort, and maintaining a routine. Food was a means for reinforcing family identity, social expression, and celebration in need states with high levels of emotional gratification. Occurrence of need states varied by day and meal/snack occasion, with food type and amount dependent on need state. Conclusions and Implications - Eating occasions are driven by specific sets of needs ranging from physical/functional to more emotional/social needs. Addressing need states may improve weight intervention programs for midlife women.

Design: Focus groups, which included questions based on Social Cognitive Theory constructs, examined food choice in the context of personal, behavioural and environmental factors. A quantitative grocery shopping activity required participants to prioritize food purchases from a 177-item list on a budget of $US 50 for a one-week period, an amount chosen based on the average household food stamp allotment in 2005. Subjects: Ninety-two low-income women, with at least one child aged 9-13 years in their household, residing in the Twin Cities, Minnesota, USA. Results: Participants' mean age was 37 years, and 76% were overweight or obese (BMI>=25.0 kg/m2). Key findings suggest that their food choices and grocery shopping behaviour were shaped by not only individual and family preferences, but also their economic and environmental situation. Transportation and store accessibility were major determinants of shopping frequency, and they used various strategies to make their food dollars stretch (e.g. shopping based on prices, in-store specials). Generally, meat was the most important food group for purchase and consumption, according to both the qualitative and quantitative data. Conclusions: Efforts to improve food budgeting skills, increase nutrition knowledge, and develop meal preparation strategies involving less meat and more fruits and vegetables, could be valuable in helping low-income families nutritionally make the best use of their food dollars.

Hmong are one of the immigrant Asian subgroups with increasing rates of obesity, type 2 diabetes and CVD. Despite their population growth in the USA and declining health status, no research has investigated the appropriateness of dietary assessment measures, including FFQ and 24 h dietary recalls among Hmong. The present study compared the nutrient information obtained through a 24 h dietary recall method with that collected using the Block Kid's Food Frequency Questionnaire (Block FFQ) among Hmong-American children (n 335) of 9-18 years of age. For this purpose, two 24 h dietary recalls were collected during non-consecutive days and averaged for comparison. The Block FFQ was administered on the day of the second 24 h recall and the two methodologies were also compared using t tests. Among all children, Block FFQ nutrient estimates for vitamin A, vitamin C and food group servings for vegetables and fruits were significantly higher than those assessed through the 24 h dietary recalls (P<0.001). Nutrient estimates for protein and food group servings for grains and meat and beans were significantly higher among all participants when assessed through the 24 h dietary recalls than through the Block FFQ (P<0.05). The results suggest that the Block FFQ does not appear to be a good measure of protein, grain, and meat and bean intake among Hmong children of 9-18 years of age, and the 24 h dietary recall offers a better account of the Hmong diet and is inclusive of ethnic food options otherwise missed in the Block FFQ. We recommend the modification of the current Block FFQ to appropriately reflect cultural food/beverage items of the population in interest.
